Pizza goodness

Lots of stuff going down right now. But I don't feel like thinking about it... I'm getting sick and my brain is just unable to function properly. I can't even veg out and read a book without getting bored. So instead, I went to bed at 9 pm last night and wallowed in my boredom until about 9:45 when I finally drifted off...

This last weekend was fun though! Friday night, Matt and I attended a SILS welcome [back] cookout and hobnobbed with old SILS students and new SILS students. Saturday, we lounged around the house until about dinner time, when I decided I really wanted to make pizza. So, we ventured out to our favorite kitchen store at University Mall to get a pizza stone and one of those wooden pizza scoopy thingies. TOTALLY WORTH THE $50! Our crusts came out perfectly (or would have, if our oven didn't run too hot).

I'm by no means a pizza dough expert. But I think I did a pretty damn good job at stretching the dough into a pretty circle. Actually, it was my first time. It could have been bigger. So, instead we had extra thick crust on one pizza and a nice normal one on the one Matt stretched.

But, the toppings, OH, the toppings! That's what I'm here to tell you about! I'm not a sauce fan, so I just drizzled EVOO and sprinkled some herbs on the dough. I believe the herbs were sage, marjoram, and parsley. And I added garlic powder, of course. The first pizza had sliced roma tomatoes, and low fat Jimmy Dean sausage. For cheese, I just used good ol' shredded part skim mozzarella. The second pizza was my invention: sliced endives, thinly sliced white mushrooms, walnuts, bacon, and gorgonzolla cheese. Topped off with shredded mozzarella. Endives on pizza = wonderful.
